The BI index includes an integral assessment of borscht, which is expressed in points, as well as the cost of borscht.
Stage one. Integral evaluation
To determine the BI borsch index at the first stage, it is necessary to carry out an integral assessment of borsch.

The result of the integral assessment will be the assignment of a certain number of points to a borsch (a maximum of 500 points is possible). The greater the number of points scored borscht, so it is better for the totality of parameters.

In this example, the mathematical meaning of the index of borscht is that the cost of 1 point of the integrated assessment is 0.909 rubles.
The smaller the index of borscht BI, the cheaper it is worth one point of the integral evaluation. That is, with the same rating of borscht, it is more profitable to order it in the place where the BI indicator is lower.
The graphs below show how the BI index of borsch index changes depending on the cost of borsch for each rating.
The majority of borscht that I tried in 2019 fell within the price range of 250 - 370 rubles. Therefore, it can be observed that an adequate relative to the “price / quality” borscht with the most demanded “divine”, “excellent” and “good” ratings can have BI is lower than one and optimally lie in the range of 0.5 - 0.9.
Then the border with the BI borscht index of 0.5 - 0.9 can be called the optimum, and the average value of this range 0.7 - the “golden section of borscht”.

7. What is the fair price of borscht?Using the borscht index, one can estimate what the “fair” price for a plate of borscht should be.
If we give an estimate of the fair value of the “golden section of borscht” (when the index of borscht is BI = 0.7), we can say that for this value BI will be the fair price per plate.
Since the range of BI borscht indices from 0.5 to 0.9 can be called the optimum, we assume that it is in it that the fair price range lies.

These figures show the cost relative to the prices on the market in 2019, so I use the terminology “fair” price.
